Some gardeners and allotment holders who have not good storage accommodation for pota- toes in the raw may care to preserve their process surpluses for later use by drying them . This can be carried out either with the usual domestic appliancee or by means of a drying machine , of which there are veral on Invicta , Lightning , and British the market , the best known being the Ghome , machine or merely a frame of wooden lats Evaporator . It is necessary whether covered with a stretch of wire gauze or can- we use a drying cook the potatoes , preferably by steaming , be- vass for placing in the oven , first to partly fore we dry them . The work is very simple indeed . The potatoes are peeled in the ordin- ary way and cut into slices about three- sixteenths of an inch thick . They should be placed thinly on a tray of the kind already mentioned as in use the drying of potatoes . The heat may then for be raised to nearly 200 Fahr , but , if the fruit at this heat becomes soft and puffy and looks like bursting , the tray should be withdrawn and the fruit allowed to cool off . As drying proceeds , the temperature is gradually low- ered to about 140 degrees , otherwise the fruit may char . When they are thoroughly dry the fruit or damsons should be withdrawn from the oven and left exposed to the air for a few days until ( having taken up sufficient moist- ure from the air ) they are of the consistency of Free by post per quarter , 1s . 8d . , payable in advance .
